Stout & Spent grain brownies

Makes 8 brownies

3T chia seed

135g water

90g cocoa nibs

120g coconut oil, melted

25g stout flour

150g coconut sugar

1g salt

105g wet spent grain

Preheat oven to 325F Process chia seeds in water in blender. Transfer to a bowl and allow to sit for 15 minutes, or until it just starts to coagulate. Process cocoa nibs, coconut sugar and coconut oil in blender until a thick paste is formed, add to chia mix. Process spent grain in the blender, just to break the grain up into smaller bits, but not to form a full puree. Add grain into chia and cocoa nib mix. Last, incorporate stout flour and salt into the mix and fold just o incorporate. Pour batter into a small, sprayed and parchment lined baking dish or a quarter sheet tray and bake 20-25 min, rotating halfway through.
