Sunflower Burger Buns

Sunflower seed meal, like other defatted nut and seed meals, is a byproduct of culinary oil production. One oil is extracted from nuts and seeds, we are left with a nutrient rich powder which can be used as a substitute and supplement for traditional wheat flour. Sunflower seed meal from our friends Planetarians contains twice the amount of protein and fiber as all purpose flour, imparts a subtle nutty flavor and unique dramatic color onto bake goods, and allows us to utilize a product that would have otherwise been treated as waste!


(Makes 1 dozen burger buns)

2 tablespoons active dry yeast

1.5 cup warm water

1⁄3 cup vegetable oil

1⁄4 cup sugar

1 egg

1 teaspoon salt

560g All Purpose flour

240g sunflower seed meal

Combine all ingredients in a mixing bowl, knead by hand until dough is homogenous and elastic. Transfer dough to a clean bowl and allow to rise, covered, for 40 minutes. When dough has doubled in size, it is ready to shape. Shape dough into buns and allow to proof on a greased baking tray for 30 minutes. Brush with egg wash and top with sesame seeds Bake 20-25min at 350F.


When buns sound hollow when tapped on the bottom, they are ready to be removed from oven.
